“I have been unofficially open for a few weeks but I will be officially open in two weeks. I opened this because I am tired of pushing the lawnmower and cutting grass and working for someone else. It is time to work for myself because I have a wife and two kids to take care of and cutting grass doesn’t get it. One is a school teacher and the other works for a law firm, but they are always saying ‘Daddy’ with a hand open. I have been thinking about this for 30 years but I was driving trucks and doing other things. When this came available, I knew it was time to give it a shot and take a new adventure. I am 62 years old, it is about time I do this. 62 is the new 40. I cooked barbecue for family reunions and everyone liked it. There are some guys in Mobile who do catering and want me to give them my sauce recipe. That’s not going to happen. I have had the recipe for 20 years and it is good. I am going to be open six days a week, closed on Sunday. We serve ribs, chicken, rib tips and whole slabs. Later on, we will have gumbo and New Orleans style turkey necks.

“I need 15 rib plates, 14 chicken plates and 8 slabs of ribs.”
“What? You said that is what you need.”
“That is what I need, but I don’t want but one.”
