“I am the sous chef at the Dumbwaiter and just became the chef at the second location in Spring Hill. This is a big promotion and I will be controlling the kitchen. I am so excited, I went to school for culinary arts and this is a dream come true. I started out as a line cook working the grill and started working every station. Six months later I moved up to sous chef. I have learned so much from the chef at Dumbwaiter. It happened fast, it usually takes years. I will be off the next few days before I get started. This will be my last downtime for a long time. Growing up I liked food but never thought I would do this. I played basketball and thought I would be a coach or play music. I sing but don’t have time to play basketball now because I am always in the kitchen.”
Good enough isn’t an option. It’s got to be the best I can do.
