This is my first restaurant to open

“I have managed other restaurants, but this is my first one to own. I like to be creative and I was ready to do my own thing. I have been thinking about this concept for years. I used to live in Austin and traveled to California and Mexico and fell in love with fresh Mexican food which you don’t find much of around here. It seemed like a fresh burrito, taco and margarita quick serve restaurant would work well in the heart of downtown. We are in a great location. I was in between jobs and thought it was time to do it. I started putting together a business plan and put together investors. I blinked and all of a sudden we are about to open. Every day is ups and downs. My wife and I wanted to come back and settle into Mobile. It is easier to make your mark here. I didn’t go to college and had no direction. I moved to Mobile and got a job waiting tables and I liked it. My boss said even if being a waiter isn’t what you want to do, work to be the best waiter you can be while you are here. I focused on being the best and worked my way up to management. I worked around good chefs. My wife and I backpacked around Costa Rica and Nicaragua for a month with no direction and were introduced to so much Latin food. I love the pace and atmosphere of restaurants. Every day is a rush because you don’t know what you are going to run into. It is the thrill of standing on the edge of the cliff and not knowing if your parachute will open. Hopefully, we will be in a position to open another restaurant in a year or two. I named it Roosters because I wanted it to have an American name that is easy to say and remember. I grew up on a farm in Foley and there were chickens in my backyard. You also see chickens running around the streets in latin neighborhoods. I can hear people say, ‘Let’s go get tacos at Roosters’.”

    So crazy I stumbled across this when in fact just this morning a coworker and I were having our daily discussion about where to eat lunch. (We work in the Trustmark building) We have heard that there was a new taco place called Roosters moving into the old Pita Pit location. Honestly we were hoping you would have been open sooner as we have already decided if the food is good, we will make it our Tuesday destination for lunch! Best of luck and well wishes!!!!
